Full job description

Position Summary

We are seeking an experienced Fish Cutter / Fish Processing Specialist with extensive knowledge of handling, cutting, filleting, portioning, and processing a wide variety of freshwater and saltwater fish species. The successful candidate must be skilled in producing high-quality cuts while maintaining food safety, sanitation, and quality standards.

Key Responsibilities

Cut, fillet, skin, bone, trim, and portion all types of freshwater and saltwater fish.
Process whole fish into customer-ready products according to specifications.
Identify various fish species and determine proper cutting and processing methods.
Remove scales, bones, skin, and other unwanted portions with minimal product waste.
Prepare fish for retail, wholesale, restaurant, and seafood market distribution.
Ensure all products meet quality, freshness, and presentation standards.
Operate and maintain fish processing equipment, knives, saws, and other cutting tools safely.
Monitor product quality, freshness, and proper storage conditions.
Follow all food safety, sanitation, HACCP, and workplace health and safety regulations.
Always maintain a clean and organized work area.
Assist with receiving, inspecting, and storing seafood inventory.

Qualifications & Experience

Minimum 3–5 years of experience as a fish cutter, fish processor, or seafood butcher.
Proven ability to process and cut all major freshwater and saltwater fish species.
Extensive knowledge of fish anatomy, filleting techniques, portion control, and yield maximization.
Experience working in seafood processing plants, fish markets, wholesale seafood operations, or commercial kitchens.
Strong knife skills and the ability to work efficiently in a fast-paced environment.
Knowledge of food handling, sanitation, and seafood safety regulations.
Ability to stand for extended periods and lift up to 50 lbs (23 kg).
Reliable, detail-oriented, and committed to maintaining high product quality.
Must be willing to undergo a criminal background check upon hire

Preferred Qualifications

HACCP, Food Safety, or Seafood Handling Certification.
Experience with commercial seafood processing equipment.
Ability to train and mentor junior fish cutters.

Work Conditions:

Warehouse and food production environment.
Require working in refrigerated or cold storage areas.
Use of personal protective equipment (PPE) as required.
