Job Description- Sous Chef

Reporting to the Head Chef a professional Sous Chef is the second in command in our kitchen, an integral part of the Restaurant management Team, reporting directly to the Head Chef. The successful candidate will employ their culinary and managerial skills in order to play a critical role in maintaining and enhancing our customers’ satisfaction.

DUTIES & RESPONSIBILITIES

The following is a list of the essential duties and responsibilities of this job. The tasks and time spent performing each task may vary as business needs require. The management of Exit 79 Restaurant / Amsterdam Inn & Suites maintains the right to modify job duties and responsibilities at its discretion.

Sous Chef responsibilities include:

· Help in the preparation and design of all food menus

· Produce high quality plates in both design and taste wise

· Ensure that the kitchen operates in a timely manner that meets our quality standards

· Fills in for the Head Chef in planning and directing food preparation when necessary

· Resourcefully solve any issues that arise and seize control of any problematic situation

· Manage and train kitchen staff, establish working schedule and assess staff’s performance

· Order supplies to stock inventory appropriately

· Comply with and enforce sanitation regulations and safety standards

· Maintain a positive and professional approach with coworkers and customers

Job brief

Responsibilities

· Ensuring promptness, freshness and quality of dishes.

· Coordinating Kitchen team tasks.

· Implementing hygiene policies and examining equipment for cleanliness.

· Training kitchen staff, such as cooks, food preparation workers and dishwashers.

· Performing administrative tasks, taking stock of food and equipment supplies, and doing purchase orders.

· Monitoring performance standards for staff.

Requirements

· 2+years of experience as a Sous Chef

· Understanding of various cooking methods, ingredients, equipment and procedures

· Excellent record of kitchen and staff management

· Accuracy and speed in handling emergency situations and providing solutions

· Familiar with industry’s best practices

· Working knowledge of various computer software programs (MS Office, restaurant management software, POS)

· BS degree in Culinary science or related certificate would be a plus

QUALIFICATIONS

· Proven experience as Sous Chef

· Approachable, pleasant, polite

· Able to work quickly, meet deadlines

· Able to work various shifts, including weekends and holidays

Educational Requirements

· Education Required :Culinary education

· Other Education/Certification/Training preferred: 2+ years experience in similar position.

Work Experience Requirements

· 2+ years experience in similar position.

· Excellent communication skills.

Other Requirements

· Must be eligible to work in Canada

Technical Requirements

· Equipment: Excellent knowledge of BOH systems, ordering and inventory

· Réaliser des assiettes de grande qualité, tant sur le plan esthétique que gustatif

· Veiller à ce que la cuisine fonctionne dans les délais impartis et respecte nos normes de qualité

· Remplacer au besoin le chef cuisinier pour la planification et la supervision de la préparation des plats Résoudre avec ingéniosité les problèmes qui surviennent et prendre en main toute situation problématique

· Gérer et former le personnel de cuisine, établir les horaires de travail et évaluer le rendement du personnel

· Commander les fournitures nécessaires pour maintenir un stock adéquat

· Respecter et faire respecter les règles d'hygiène et les normes de sécurité

· Adopter une attitude positive et professionnelle envers les collègues et les clients

Description du poste

Responsabilités

· Veiller à la rapidité, à la fraîcheur et à la qualité des plats.

· Coordonner les tâches de l'équipe de la cuisine.

· Mettre en œuvre les règles d'hygiène et vérifier la propreté du matériel.

· Former le personnel de la cuisine, notamment les cuisiniers, les préparateurs alimentaires et les plongeurs.

· Effectuer des tâches administratives, faire l'inventaire des stocks de denrées alimentaires et de matériel, et passer les commandes.

· Contrôler le respect des normes de rendement par le personnel.

Conditions requises

· Au moins 2 ans d'expérience en qualité de sous-chef

· Maîtrise des différentes techniques de cuisson, des ingrédients, du matériel et des procédures

· Excellents antécédents en matière de gestion de cuisine et d'équipe

· Précision et réactivité face aux situations d'urgence et dans la mise en place de solutions

· Connaissance des meilleures pratiques du secteur

· Maîtrise pratique de divers logiciels (MS Office, logiciels de gestion de restaurant, systèmes de point de vente)

· Un diplôme de licence en sciences culinaires ou un certificat équivalent serait un atout

Pay: $20.00-$23.00 per hour
