This is a rare opportunity to work alongside Chef Darren MacLean and a team operating at the pinnacle of Canadian gastronomy. With only eight guests per service, your mastery of wine, sake, and hospitality will shape unforgettable evenings of precision, elegance, and discovery.

ROLE DESCRIPTION:

We’re looking for a sommelier who doesn’t just pour wine — you craft narratives. You’re articulate, composed, and thrive in a high-performance, high-reward environment. You bring quiet confidence, magnetic charm, and a deep reverence for the guest experience.

KEY RESPONSIBILITIES:

⁠ ⁠- Curate and maintain a refined wine and sake program tailored to our seasonal tasting menus

⁠ - ⁠Deliver expert pairings that enhance the culinary storytelling of each course

⁠ ⁠- Educate guests with enthusiasm and precision, guiding them through selections with grace

⁠ ⁠- Collaborate closely with the kitchen and service teams to ensure seamless execution

⁠ ⁠- Manage cellar inventory, ordering, and supplier relationships

⁠ ⁠- Lead internal training and beverage education for staff

⁠ ⁠- Assist in service and guest interactions as needed

WHAT YOU BRING:

⁠ ⁠- Minimum 2 years of sommelier or fine dining wine service experience

⁠ ⁠- WSET Level 2 or higher (or equivalent certification/knowledge)

⁠ ⁠- Deep knowledge of global wine regions, sake, and food pairing principles

⁠ ⁠- Calm, confident, and charismatic presence — a natural storyteller

⁠ ⁠- Valid ProServe certification

⁠ ⁠- Flexibility to work evenings, weekends, and holidays
