Full job description

Grill Cook

We are currently seeking an experienced Grill Cook to join the culinary team at Mati Crudo + Charcoal.

This is not an entry-level position. We are looking for a skilled cook with experience working over a charcoal or open-flame grill in a high-volume, scratch kitchen. The ideal candidate understands meat temperatures, premium cuts, proper resting techniques, and the precision required in an upscale or fine-dining environment.

Responsibilities

Prepare and execute grilled meats, seafood, and other menu items to Mati’s culinary standards
Cook proteins accurately and consistently to requested temperatures
Manage the grill station efficiently during high-volume service
Monitor heat levels and maintain control of the charcoal or open-flame grill
Complete daily preparation and mise en place using fresh, high-quality ingredients
Maintain exceptional cleanliness, organization, and food-safety standards
Work closely with the Head Chef and culinary team to ensure timely, coordinated service
Assist with inventory, station setup, equipment maintenance, and closing procedures
Minimize waste through proper preparation, portioning, and product handling

Requirements

Minimum three years of professional kitchen experience, preferably in an upscale, fine-dining, or chef-driven restaurant
Previous experience working on a charcoal, wood-fired, or open-flame grill is strongly preferred
Strong knowledge of meat temperatures, premium cuts, seafood, and grilling techniques
Experience working in a scratch kitchen
Ability to execute multiple orders with speed, precision, and consistency
Strong knife skills and knowledge of proper food handling
High attention to detail, presentation, and quality
Excellent communication and teamwork skills
Reliable, professional, and committed to maintaining high standards
Culinary education is considered an asset
Open availability, including evenings, weekends, and holidays
