At Miette, bread is everything. We're looking for someone who feels the same way.

Miette Boulangerie is seeking a part-time artisanal sourdough baker who takes the craft seriously. If you've built your career around fermentation, dough, and the smell of a deck oven before sunrise — we want to hear from you.

The Role

Early mornings, honest work, and exceptional bread. You'll join our team starting at 4am to produce the boulangerie's daily bread program. This is a hands-on production role with no shortcuts and no compromising on quality.

What You'll Be Doing

Shaping and baking baguettes and other breads to standard, every single day
Loading and operating deck ovens with confidence and precision
Executing recipes while understanding the why behind each step
Upholding the quality and consistency Miette is known for

Requirements (Non-Negotiable)

Prior professional experience in bread production — this is not an entry-level position, and we will not train fundamentals
Hands-on sourdough experience: you understand hydration levels, fermentation schedules, and how to read a dough
Proficiency with deck ovens and standard bakery equipment
The ability to shape a proper baguette
Availability for a 4am start; early mornings are the job, not the exception

Miette Boulangerie est à la recherche d'un·e boulanger·ère artisan·e au levain à temps partiel qui prend son métier au sérieux. Si vous avez construit votre parcours autour de la fermentation, des pâtes et de l'odeur d'un four à sole avant l'aube — nous voulons vous rencontrer.

Le poste

Matins tôt, travail authentique, pain exceptionnel. Vous rejoindrez notre équipe à partir de 4h du matin pour assurer le programme de pain quotidien de la boulangerie. C'est un poste de production concret — sans raccourcis, sans compromis sur la qualité.

Vos responsabilités

Façonner et cuire des baguettes et autres pains selon nos standards, chaque jour
Charger et opérer les fours à sole avec assurance et précision
Travailler selon des recettes établies tout en comprenant le pourquoi de chaque étape
Maintenir la qualité et la régularité pour lesquelles Miette est reconnue

Exigences (non négociables)

Expérience professionnelle préalable en production boulangère — ce poste n'est pas destiné aux débutants et nous n'assurerons pas la formation aux bases du métier
Expérience pratique avec le pain au levain : vous maîtrisez les taux d'hydratation, les horaires de fermentation et savez lire une pâte
Maîtrise des fours à sole et des équipements standards de boulangerie
Capacité à façonner une baguette correctement — vous ferez une démonstration lors de l'entretien
Disponibilité pour commencer à 4h du matin ; les matins tôt ne sont pas l'exception, c'est le cœur du poste
