Full-Time Pastry Cook

Brodflour is looking for a skilled and dependable Full-Time Pastry Cook to join our bakery team.

We are a one-of-a-kind urban mill and bakery specializing in fresh-milled flour, naturally fermented bread, laminated pastry, and seasonal baked goods. We stone mill premium Canadian organic and regenerative grains in-house and use that flour fresh throughout our baking program.

Since opening in 2019, Brodflour has built a loyal following for our bread and pastry program, and we are looking for someone who is excited about working with high-quality ingredients, learning, and producing exceptional baked goods in a fast-paced bakery environment.

The Role

As a Pastry Cook, you will work closely with our pastry team and bakery leadership on the daily production of our pastry program.

Responsibilities include:

Scaling, mixing, shaping, portioning, and producing a variety of pastry items including croissants, laminated pastries, cookies, muffins, financiers, madeleines, cakes, fillings, creams, and seasonal products
Laminating and sheeting croissant and other laminated doughs
Following production schedules, recipes, and established procedures accurately and consistently
Assisting with proofing, finishing, baking, and the daily bake-off of pastry products
Preparing fillings, garnishes, toppings, and other pastry components
Maintaining excellent quality and consistency across all products
Monitoring ingredient levels and communicating production or inventory needs to management
Properly storing, labelling, rotating, and handling ingredients and finished products
Maintaining a clean, organized, and sanitary workstation throughout the shift
Participating in daily and weekly cleaning of bakery equipment and production areas
Working collaboratively with the rest of the pastry, bread, milling, and kitchen teams
Helping the team complete production efficiently during particularly busy periods

What We're Looking For

The ideal candidate:

Has previous professional bakery or pastry experience
Has experience using a dough sheeter and working with laminated doughs — this is required
Has a strong understanding of basic pastry production techniques
Can accurately follow recipes, scaling instructions, and production specifications
Is comfortable working independently while also contributing to a team
Is organized, efficient, and able to manage multiple production tasks
Has strong attention to detail and takes pride in producing consistent, high-quality work
Is dependable and punctual — early morning availability is required and shifts may begin at 6:00 a.m.
Is comfortable working in a physically demanding bakery environment
Can stand for extended periods and repeatedly lift up to approximately 20 kg / 44 lbs
Is comfortable working around ovens, mixers, sheeters, flour, and other commercial bakery equipment
Understands the importance of food safety, cleanliness, organization, and proper ingredient handling
Communicates clearly and professionally with managers and coworkers
Is receptive to feedback and interested in continuing to improve their pastry skills

Schedule
