CHEF DE PARTIE CAFE ONE KITCHEN

As a Chef De Partie, you will be in a supervisorial role of the culinary team. You will show case your talents as a leader and ensure each dish is flawless. Your talent will ensure our Café One guests experience as a place to gather, dine and connect. We trust you can change with the flow of a restaurant, consistently provide our customers with remarkable meals without delay that meets the impeccable Wall Centre standards.

What your day will look like:

Work closely with the kitchen associates and the front of the house associates in a respectful manner to resolve conflict and answer questions.
Train and supervise kitchen staff in the proper preparation of menu items, equipment and safety measures.
Prepare food items for customers using a quality pre-determined method in a timely and consistent manner with a minimum of wastage.
Manage all aspects of the food production for the restaurant according to hotel standards and sanitation practices.
Be aware of current food trends with regard to presentation and style to help with new menu ideas and menu design.
Assist the Restaurant Chef with food costing, menu development and portion control.

Your Experience and Skills Include:

Must have Food Safe Level 1 and Level 2.
Interprovincial Red Seal Certification mandatory.
Ability to obtain and or maintain any provincial and federal licenses, certificates and permits.
Required to have a minimum of five (5) years’ experience in comparable 4 diamond hotels or restaurants.
Completion of a recognized culinary program.
Must be able to speak, read, write and understand English, strong knowledge of French cuisine is required.
Must have strong communication skills, both verbal and written.
Due to the cyclical nature of the industry, employee will be required to work varying shifts and times due to the needs of the business within the hotel. Inclusive of holidays and weekends.
Must possess basic computational skills.
A neat, clean, well-groomed appearance as per hotel standards.
Excellent health is necessity as this position is mentally and physically demanding.
Ability to physically handle knives, pots, mirrors, or other display items as well as grasp, lift carry the same from shelving units and otherwise carry up to 50lb. To every area of the kitchen.
Ability to physically self-demonstrate culinary techniques i.e., cutting, cooking principles, plate presentation, safety and sanitation practices.
Ability to perform cutting skills on work surfaces and handle various machinery and other kitchen related equipment.
Must be able to stand and exert a well-paced mobility for up to 10 hours a day.
Must be able to exert well-paced ability to reach other departments in a timely fashion.
Must be able to lift up to 50 lbs. on a regular and continuing basis.
Must be able to push and pull carts and equipment weighing up to 150lb occasionally.
Must be able to bend, stoop, squat and stretch to fulfill cleaning and inspection tasks.
Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.
Most tasks take place indoors. Must be able to work in differing environments from freezers (-18ºF) to kitchen hot lines (+110ºF).
The worker is subject to elevated noise levels, occasionally causing the worker to shout in order to be heard above ambient noise levels.
