Full job description

Job Overview
Crust Craft Inc. is a Research & Development driven commercial bakery that specializes in the manufacturing of specialty bakery products. This dynamic role will report directly to the R&D Manager and work in coordination with Quality Assurance, Process Development, Sales & Marketing, Accounting, Production, and Warehouse. Crust Craft Inc. has a dynamic team of professionals that produce high quality results in a fast-paced environment.

Shift Schedule:

Flexible scheduling required based on production, trials, and business needs.
Occasional overtime or weekend work may be required.

Product Development:

Research ingredients, packaging, trends and technologies.
Formulation, process determination, packaging design (box and bag sizes).
Continuous Improvement of current products and processes.
Take lead in conducting lab and production line samples.
Prepare and package samples for delivery to customers.
Work in coordination with Sales & Marketing initiatives.
Document and record data from testing.
Assist in SR&ED project data accumulation and reporting.
Assist in sensory analysis, shelf-life determination and verification.

Operations:

Assist production in trouble shooting issues for current products.
Oversee first production run of new products.
Safely operate bakery equipment including mixers, ovens, sheeters, etc.
Strict compliance to company health and safety goals and initiatives.
Retrieve ingredients, materials, and samples from warehouse.
Work collaboratively with Production, Warehouse, QA, Administration, and other departments.

Safety Initiatives:

Adhere to all company Safety, GMP, hygiene, food safety, and HACCP requirements.
Properly use all required PPE including safety footwear, gloves, hearing protection, etc.
Follow safe work procedures and Lockout/Tagout requirements when applicable.
Maintain a clean and organized work area to reduce slip, trip, fall, contamination.
Follow allergen control procedures for wheat, dairy, soy, etc.
Report unsafe conditions, injuries, illnesses, near misses, equipment concerns and food safety.
Participate in hazard identification, corrective action, incident investigations if applicable.

Physical Requirements:

Prolonged standing and walking throughout the shift.
Frequent lifting, carrying, pushing, and pulling of materials, trays, and racks.
Ability to work in hot, cold, humid, dusty, noisy, moving conveyors and fast-paced environments.
Ability to wear required PPE for extended periods of time.
Comfortable working in hot, cold, humid, dusty, noisy, fast-paced environments and moving conveyors.
Exposure to flour dust, ingredient dust, food allergens, and hot equipment or surfaces.

Qualifications and Competencies:

Red Seal Baker certificate.
5+ years Baking experience particularly in yeast doughs. Knowledge of sourdough technology and industrial baking would be an asset.
Strong understanding of food safety systems and HACCP.
Strong oral and written communication skills.
Proficient computer skills (Excel, Word, Publisher and Power Point).
Strong leadership and team skills.
